Ingredients
1 cup unsalted butter, softened (226 grams)
1/2 cup sugar (100 grams)
1/4 cup brown sugar (55 grams)
2 teaspoons vanilla extract
2 cups all-purpose flour (240 grams)
1/2 teaspoon cardamom
1 teaspoon kosher salt
1 cup orange marmalade
Directions
- Preheat an oven to 350°F.
- Cream together the butter and sugar until they are pale, light, and fluffy. This will take 2-3 minutes.
- Beat in the vanilla extract and cardamom.
- Slowly fold in the remaining ingredients.
- Separate off about 1/4 of the dough. Place it between two pieces of parchment paper and roll to about 1/8 inch thick. Transfer the parchment and dough to a sheet tray and place in the freezer for at least 20 minutes or until solid.
- Line a 8×8 pan with parchment and press the remaining 3/4 of the dough into the pan.
- Use a fork to prick the dough.
- Bake for 25 minutes and let cool for about 15 minutes.
- Spread the orange marmalade onto the cooled bars.
- Remove the sheet of dough from the freezer and immediately cut it into small circles for the polka dots. I used the smallest circle cutter here.
- Place the polks dots in rows on top of the jam.
- Bake for another 25-30 minutes and enjoy!
