I’ll admit it—I’m not a huge fan of those classic Valentine’s Day chocolate boxes (don’t tell my exes). They usually end up sitting around at my house, half-heartedly picked over. So instead of biting into mystery chocolates, I’m turning them into something I do love: cookies!
These Life is Like a Box of Chocolates Cookies take the best part of assorted chocolates—the rich, decadent flavors—and transform them into soft, delicious bites of goodness. Just as with a box of chocolates, you never know what you’re going to get inside these cookies, but you do know that each bite will be chewy and delicious.

Life is Like a Box of Chocolates Cookies

Ingredients
1 cup unsalted butter, browned and cooled (227 grams – before browning)
1 cup brown sugar (220 grams)
1/4 cup sugar (50 grams)
1 large egg (about 50 grams)
1 large egg yolk (about 15 grams)
1 teaspoon vanilla extract
2 cups + 2 Tablespoons all-purpose flour (256 grams)
1 teaspoon baking soda
2 teaspoons cornstarch (5 grams)
1 teaspoon kosher salt
1 box of chocolates (180 grams) (about 18 pieces – I used the Target brand)
1/4 cup semi-sweet chocolate chips (42 grams)
Directions
- Preheat an oven to 350°F.
*note: if you choose to chill your dough, you will want to wait to preheat your oven - Start by browning the butter and cooling it completely.
You can let the brown butter cool at room temperature – this will take 30-45 minutes.
Or to cool brown butter rapidly, immediately pour it into a heatproof bowl. Place that bowl in a larger bowl filled with ice water, and stir it until it solidifies. - Cream together the brown butter and sugars until light and fluffy. This will take 2-3 minutes.
- Beat in the egg, egg yolk, and vanilla extract.
- Slowly fold in the flour, cornstarch, baking soda, and salt.
- Chop up the chocolates from the box of chocolates.
- Fold in the chopped chocolates and the chocolate chips.
- I recommend you chill the dough for 2-3 hours or overnight, but you can bake them immediately if desired.
- Scoop the cookies into 2 Tablespoon size balls – I use a #30 scoop for this.
- Bake for 8-10 minutes. Enjoy!
