These strawberry cookies dipped in chocolate are a tribute to the timeless symbol of love and the classic flavor combination

Ingredients

  • 1 cup unsalted butter, softened (227 grams)

  • 1 cup sugar (200 grams)

  • 2 large egg (about 100 grams)

  • 2 teaspoons vanilla extract

  • 2 3/4 cups all-purpose flour (330 grams)

  • 1 teaspoon kosher salt

  • 1/2 teaspoon cream of tartar

  • 2 cups freeze-dried strawberries (56 grams) (I found these at Target or Trader Joe’s)

  • green food coloring

  • red food coloring

  • 1-2 Tablespoons white sesame seeds

  • 1-2 cups of semi-sweet chocolate chips, melted for dipping

Directions

  • Preheat an oven to 350°F.
  • Cream together the butter and sugar until light and fluffy. This will take 2-3 minutes.
  • Beat in the eggs and vanilla extract.
  • Slowly fold in the flour, salt, and cream of tartar.
  • Remove about 1/2 a cup of the plain dough and set aside (this will be for the green stems).
  • In a blender or food processor, blend the freeze-dried strawberries until they are a powder.
  • Add the strawberry powder to the remaining dough along with 3-4 drops of red food coloring and mix until combined.
  • Place the strawberry dough between two pieces of parchment paper and roll to 1/8″ thick.
  • Transfer the parchment and strawberry dough to a sheet tray and place in the freezer until solid. This will take about 20 minutes.
  • To the plain dough that was set aside, add 3-4 drops of green food coloring and mix until combined.
  • Place the green dough between two pieces of parchment paper and roll to 1/8″ thick. Transfer the parchment and dough to a sheet tray and place it in the freezer until solid.
  • Cut strawberry shapes out of the strawberry dough. I used this cookie cutter set.
  • Sprinkle a bit of sesame seeds onto each cookie.
  • Using the stem cutter from the same set, cut stems out of the green dough.
  • Dab a small amount of water onto the back of the stem before pressing it into the strawberry cookie.
  • Use a toothpick to create leave lines on the green stems.
  • Bake for 7-8 minutes.
  • Once the cookies have cooled, dip the end of strawberries into the melted chocolate. Enjoy!
